Im forever in search of new dips & sauces and in the mixing room I concocted this wonderful, creamy mushroom dip.
The mushroom-ness is subtle and balanced with a refreshing lemon flavour.
Loaded with vitamins from the greens & celery, this super healthy dip is awesome with chopped veggie sticks, over zoodles, zipped with pitta bread or with cherry tomatoes on toasted baguette. YUM!
3 medium size white mushrooms
2 sticks of celery
1tsp dried garlic
1 tbs tahini
big handful of mixed leaves - rocket, spinach, watercress
half a medium sized lemon (remove the yellow zest but leave the white layer on!)
1 spring onion
Chop and place all ingredients in the blender.
Blend until creamy
Serve cold & enjoy this yummytastic dip with friends & family!!
