Yummy yum yum!
These sweet potato blondies are like soft, savoury scones. Super easy and quick to make, perfect for taking round to a dinner party or pot lucks and for lunch snacks the day after. Cook the sweet potatoes until gooey soft, mix all the ingredients together and pop them in the oven... simples!
200g sweet potatoes (cooked)
50g peanut butter
2 tbs maple syrup
2 tbs coconut flour
1tsp baking powder
1 tsp cinnamon
pinch sea salt
3-4 tbsp non-dairy milk
optional add ins - herby herbs like oregano, basil and mint!
Preheat oven to 180C degrees
Combine all ingredients except the non-diary milk in a food processor or blender
blend adding the milk 1 tablespoon at a time until combined into a very thick batter. It should be almost crumbly but not quite! Don't add too much milk or they will turn out mushy.
spoon out into little blondie size bites,
Pop them on baking sheet and top with extra herbs / nuts
Bake for 35minutes or until golden brown toasted
Remove and allow to cool (duh) keep leftovers (if there are any) in fridge
