Melted Cheese Pepper Pots

New Years eve was upon us and I had decided to use up all the leftover Christmas foods and start January with a fresh slate after all the holiday gorging on vegan cheese's and meats. We had a pepper left over, a few bits of cheese and a packet of quinoa that had been sat in the cupboard since early 2017, so I came up with this yummy combo...

 

It was marvellous, some even said its their favourite meal i've made yet, what a lovely way to end a year on a high. Like all my recipes this requires simple and few ingredients, is very easy to make and doesn't take long at all. Give it a go and let me know what you think, its a perfect dish to try if your doing Veganuary!  :)

Ingredients 

Recipe serves 2

1/2 Red onion

1 tsp coconut sugar

1/2 garlic clove

1 red pepper

1/2 pomegranate

A small block of Wensleydale with cranberries cheese - Free from selection at Sainsbury's 

1 C quinoa

Optional sprinkle of paprika

Tin foil

 

Method

Set the oven to 225C

 

Chop the red pepper in half and remove the centre seedy bit

 

Chop the red onion, garlic and Wensleydale

Now that little mix is going to be separated evenly and placed into each pepper bowl

 

Sprinkle each half with a little coconut sugar and paprika (optional)

 

Place your pepper bowls onto the tin foil and wrap them like a xmas present but leaving a little peeping gap above the centre mix

Pop that jazz in the oven and lets crack on with the rest..

 

 

 

 

 

 

Cook the quinoa... pan, water, boil, simmer, wait etc etc

OR

1Cup quinoa to 2 Cups of water, microwave for 5 mins Stir then another 8 mins

Meanwhile...

Cut your pom in half

When the quinoa is cooked, drain any excess water and mix all your seeds in 

 

 

 

 

 

 

 

Now we're wanting those peppers to look nice and soft, leave them in for as long as it takes but usually around 25min. Just enough time for that quinoa to turn fluffy

 

Take pepper parcels out and pop them on a plate.

Careful not to spill any of the yummy melted onion cheese juices!...

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Spoon your pomegranate quinoa mix into the top of the parcels

I had some Violife grill me cheese leftover so I grilled some strips and popped that on top, combined with yummy steamed parsnips and Brussel sprouts.

 

Fully recommend this healthy yummy combo... 

divine!
